Unnakkaya | Malabar Ramadan Snack | Malabar Style Unnakkaya Recipe
Unnakkaya is delicious, sweet and traditional Kerala snack. prepared mainly in the northern Malabar, during the Ramdan days. It is prepared by filling smashed bananas stuffed with cashew nuts, raisins and Grated coconut.

INGREDIENTS
3 nos Ripe plantains / Nenthrapazham
1 cup Grated coconut
2 Tbsp or as needed Sugar
1 tbsp Raisins
2 tbsp cashew nuts
3 – 4 nos Cardamom powder
1 pinch Salt
1 tbsp Ghee
Oil for deep frying
INSTRUCTIONS
Boil the banana, After cooling it, peel off the skin and cut into half and remove the black seed thread. and mash well and keep aside.
Heat ghee in frying pan and fry cashew nut and raisins, remove from heat and keep aside.
Add grated coconut and saute for 5 minutes till the moisture is absorbed. add sugar to the mix and stir well. add cashew nut raisins and cardamom powder. mix well.
Remove from the stove and allow it to cool.
Apply a touch of ghee on both the palms. Divide the mashed bananas into evenly sized small balls. flatten it with your thumb, 2 tsp of the filling inside, seal the edges and roll into cylindrical shape with elongated edges.
Heat the oil in a deep bottomed pan and deep fry the bananas into golden yellow in color. serve them hot.
