INGREDIENTS
4 nos Eggs
3 nos Onion (finely chopped)
1 tsp Garlic paste
1 tsp Ginger paste
1 nos Tomato (sliced)
2 nos Green chilly (finely chopped)
1/2 tsp Turmeric powder
1 tsp Red Chilly powder
1/2 tsp Pepper powder
3/4 tsp Garam masala
1/2 tbsp Finely chopped coriander leaves
2 sprig Curry leaves ((finely chopped))
2 tbsp Coconut Oil
2 tbsp Water
Salt to taste
1 nos Egg white (for brushing)

INSTRUCTIONS
Boil the eggs, remove the shell and cut into halves; Set aside.
Heat oil in a pan, add chopped onion and saute till translucent.
Add ginger-garlic paste, green chilly, tomato, curry leaves and saute till the onion turns golden brown.
Add turmeric powder, chilly powder, pepper powder and garam masala. Mix well, fry for few seconds.
Now add 2 tablespoon of water and salt; Saute until the mixture is dry.
Add chopped coriander leaves . Remove from flame and Set aside.
Thaw the puff pastry as per the package instructions. beat 1 egg with 1-2 tsp water for egg wash. Apply this egg mixture on four sides of the puff pastry.
Put onion masala equally on each pastry and place an egg half on top of it. seal the puffs perfectly.
Bake in the preheated oven for 20-25 mins or until the puff pastry is golden color, serve hot.
