INGREDIENTS
1 kg jeerakasala rice(kaima)
200 gm dalda
50 gm ghee
2 kg chicken(biriyani size pieces)
3/4 cup thinly sliced onion
50 gm cashew nut
50 gm raisins
1 1/2 tbsp ginger (paste)
1 1/2 tbsp garlic (paste)
2 tbsp green chilli(crushed)
2 nos tomato
2 teaspoon garam masala(powder)
1 tbsp chilli powder
1 1/2 teaspoon turmeric powder
1 teaspoon kashmiri chilli powder
1 teaspoon fennel seed powder
1/2 cup coriander leaves
1/4 cup mint leaves
salt to taste
watter 1 cup rice 2 cup watter(please mesure rice)
3/4 cup onion sliced lenghthwise
garam masala (for rice )
2 piece cinnamon
3 nos clove
3 nos cardamom
2 nos mace
1 piece bay leaf
INSTRUCTIONS
heat a pan and pour the dalda
Fry the onion,cashew nuts,raisins and keep this aside
This dalda add ginger,garlic paste,green and chilli crushed heat it
Add the onion(sliced lengthwise) add sault and saute well. The onion becomes dry add tomato,
chicken(cleaned),chilli powder,turmeric powder,garam masala powder and fennel seed powder,kashmiri chilli powder mix well and cook
Heat another pan add remaining dalda add watter,cinnamon,cardamom,mace,clove,bay leaf and salt
After boiling the mix add rice(cleaned) cook until the water evaporated

Add this rice in small quantities to the cooked meat,garnishing onion,cashew nuts,raisins,mint leaves,coriander leaves
Make two more layers and pour ghee over it.
Cover the vessel with a lid and place live coals on the lid and under the vessel
