 Sugiyan Recipe / Sukhiyan Recipe

INGREDIENTS
 
1 cup Cherupayar/Moong Dal/Green Grams
1/2 cup Jaggery
1 cup All Purpose flour/Maida
1 tbsp Rice flour
3 nos Cardamom powder
2 tbsp sugar
1 tbsp khajur (dates fruit) (chopped small pieces)
1/2 cup Grated Coconut
salt to taste
oil for frying

INSTRUCTIONS
 
Soak the greengram/cherupayar for 5-6 hrs. Cook cherupayar with 2 cups of water and pinch of salt till water is completely drained.
In a pan melt the jaggery with ¼ cup water.
When it starts melting add grated coconut and cooked greengram mix & combine well.
Saute well till mixture thicknes and dry; now add cardamom powder,kajur and mix well. Remove from heat and allow it to cool.
Make small sized balls with greengram mixture.
take a bowl mix all purpose flour, besan flour, rice flour,turmeric powder, salt and water. make a thick mixture.
Heat oil in a pan, dip each of the balls in the batter and deep fry till golden brown.
Then remove and drain excess oil.
