INGREDIENTS
1 kg Chicken
4 nos Green chilly (slit)
200 gm Shallots
3 nos Onion (sliced)
14-16 nos Garlic cloves (chopped)
3 inch Ginger (chopped)
2-3 tsp Pepper (green) (crushed)
1 1/2 tsp Fennel seeds
2 inch Cinnamon
7-8 Clove
1 nos Star anise
Mace little
1/2 tsp Turmeric powder
2 tsp Coriander powder
2 1/2 tsp Chilly powder
2 tbsp Coconut oil
2 sprig Curry leaves
Salt to taste
INSTRUCTIONS
Rub chicken pieces with turmeric powder and salt. keep for one hour.
Cook in little water.
Heat oil in a pan, add spices, one sprig curry leaves, stir till aroma spreads, add shallots, onion, ginger and garlic, saute well.
Add pepper, green chilly and 1/2 sprig curry leaves, saute well till ingredients are tender, reduce flame.
Add curry powders, saute well.
Add 2 cups boiled water, allow to boil, add cooked chicken, flame simmer till gravy thickens, add curry leaves and adjust salt.
