INGREDIENTS
 
1/2 kg Chicken with bones
1 nos Onion ( finely chopped )
1 nos Tomato (sliced)
2 tsp capsicum (sliced)
3-4 nos Green Chillies (slit)
2 tsp Ginger Garlic Paste
2 nos Bay leaves (tej patta)
2 tbsp sunflower oil
3-4 nos Cardamom (Elaichi)
4-5 nos Cloves (Laung)
1 inch Cinnamon Stick(Dalchini)
1/4 tsp Whole Black Peppercorns
Salt to taste
3 1/2 cups Water
For mandi spice powder
1 tsp Cardamom (Elaichi)
1 tsp Cloves (Laung)
2 tsp Whole Black Peppercorns
1 tsp Nutmeg powder
5-6 nos Red chilly
3-4 nos Bay leaves (tej patta)
1 inch cinnamon
2 cups Basmati rice (ali baba / india gate)

INSTRUCTIONS
 
To make the Mandi spice powder, dry roast the cardamom, cloves, black pepper, nutmeg, fennel seed red chilli and bay leaves for 4-6 minutes. grind together into a fine powder.
Take the chicken on a plate. Add the salt, lemon juice, prepared spice powder and two tablespoons chicken stock (optional), rub well, cover and refrigerate to marinate for one hours.
Wash and soak basmati rice for at least 1 hour.
Heat sunflower oil in a large nonstick pot. Add onion and saute until soft. Add garlic and green chilli and cook for an additional minute.
Add cardamom, fennelseed, bay leaves, black peppercorns, cloves, cinnamon, lime juice and chicken and cook for 4-5 mins.
Add (1 cube) maggi Chicken cubes and water, simmer over medium heat until chicken is fully cooked.
Gently remove chicken and place on an oven tray with skin side up.
Add sliced tomato, sliced capsicum to the stock and mix well.
Add 3 1/2 cup water, dried lemon and rice to the stock, cook over medium low heat until rice is fully cooked.
In a small mixing bowl, add tomato paste, yogurt, turmeric, black pepper and Mandi spice powder and some salt, mix well and brush over the cooked chicken skin. Grill the chicken in a preheated oven at 200°C oven until skin is roasted.
To add smoke flavour to the rice
Once the rice is fully cooked, remove cover and place a small bowl in the center. Pour sunflower oil in the bowl and place charcoal is burning hot, and quickly cover the rice to prevent the smoke from escaping the pot. Leave cover on for 2 min until rice is infused with smoke.
Open it and serve, spread rice onto a large serving tray and place a piece of baked chicken on the top.
