Ingredients:

Chicken – 500g, cut into pieces

Coconut oil – 2 tbsp (ideally)

Onion – 2 large, finely chopped

Tomatoes – 2 medium, chopped

Fresh ginger – 1-inch piece, finely chopped

Garlic – 6-8 cloves, crushed

Green chilies – 2-3, slit lengthwise

Curry leaves – A handful (essential for authentic flavor)

Garam masala – 1 tsp

Turmeric powder – 1/2 tsp

Red chili powder – 1 tsp (adjust to your spice preference)

Coriander powder – 2 tsp

Cumin powder – 1/2 tsp

Coconut milk – 1 cup

Cashew nut paste – 1 tsp (optional)

Salt – To taste

Water – As required

Fresh coriander leaves – For garnish

Instructions:

1. Heat the coconut oil in a large cooking pot or pan over medium heat. Once hot, add the curry leaves, green chilies, ginger, and garlic. Sauté the mixture for about a minute until the aroma of ginger and garlic fills the air.

2. Add the finely chopped onions to the pan and sauté them until they become soft and golden brown.

3. Stir in the chopped tomatoes and cook them until they soften and release their juices, creating a slightly mushy texture.

4. Add the turmeric powder, red chili powder, coriander powder, and cumin powder. Mix everything thoroughly and let the spices cook for about 2 minutes, allowing them to release their essential oils and deepen in flavor.

5. Introduce the chicken pieces to the pan, stirring them for around 5 minutes until they turn white and are evenly coated with the spice mixture.

6. Pour in the coconut milk and add enough water to just cover the chicken. If you prefer a tangy flavor, add the cashew nut paste at this point.

7. Bring the curry to a boil, then reduce the heat to a simmer. Allow the dish to cook for 20-25 minutes, or until the chicken becomes tender and the curry thickens to your desired consistency.

8. Once the chicken is cooked, taste the curry and adjust the salt as needed. Garnish with freshly chopped coriander leaves for a burst of color and freshness.
