INGREDIENTS
1. 3 nos onion
2. 1 cup (250 gm) besan flour
3. 3 tbsp rice flour
4. 2 tsp chilli powder
5. 1 tsp Kashmiri chilli powder
6. 1/2 tsp Turmeric powder
7. 1 tsp meat masala
8. 2 spring curry leaves
9. 1-inch ginger ( chopped )
10. 1/4 tsp baking soda/cooking soda
11. 2 pinches asafoetida
12. salt to taste
13. water as required
14. oil for deep frying
INSTRUCTIONS
1. In a mixing bowl, take besan flour, rice flour, turmeric powder, chilli powder, Kashmiri chilli powder, meat masala, baking soda, salt to taste and water. mix it well and make a very thicker batter. keep for 1 hour.
2. Add sliced onion, ginger, curry leaves, asafoetida and salt to taste. mix very well.
3. Heat oil for deep frying in a pan or Kadai.
4. When the oil is hot reduce the flame to medium.
5. Drop spoonfuls of batter in the oil (or take the batter in hand and make a vada shape).
6. Deep fry the vadas turning crisp and golden brown.
7. Serve thattukada style Ulli vada hot with chutney and hot tea.
