INGREDIENTS
1 cup garlic
2 tsp chilli powder
1/2 tsp cumin seeds
1/2 tsp turmeric
3 tbsp gingelly oil
1/2 tsp fennel seeds
1/8 tsp asafoetida (hing)
1 tsp kashmiri chilli powder
2 tbsp vinegar
salt as required
INSTRUCTIONS
Take a chopping board and peel the garlic cloves. Take a frying pan and add mustard seeds, fenugreek seeds and fennal seeds. Roast them. Once roasted, In a smaller mixer take them. Crush the seeds to a coarse or semi-fine mixture. Do not make a fine powder. Set aside.
Now, take a heavy-bottomed saucepan and pour 2 tablespoon gingelly oil in it. Once heated, add chopped garlic cloves into it. Saute it for 2 minutes.
Add the ground mixture into the saucepan and saute for 3 minutes. Now add salt, chilli powder, turmeric, asafoetida (hing), kashmiri chilli powder and vinegar. Mix and combine very well. Cook the mixture until the consistency is thick.
Now add the remaining quantity of oil into the thick mixture and cook for 10 minutes. Let it cool and pour the mixture into glass bottles.
Lastly, cover the top layer of pickle with 3 tablespoons mustard oil. The oil should be at room temperature.
Tightly cover garlic pickles with lid and place in sunlight for 2 to 3 days.
